Agaricus Blazei (also known as Agaricus subrufescens, Agaricus brasiliensis or Agaricus rufotegulis). Agaricus Blazei has a distinctive almond aroma, thus it is also commonly named “Almond Mushroom.” We offer organic whole Agaricus Blazei in one-pound bags or bulk.

Suillus Luteus (initially classified as “boletus luteus” and commonly referred to as “slippery jack” or “sticky bun,” due to its characteristically slimy brown cap in wet conditions). Bolet mushrooms are wild harvested with an earthy/buttery aroma. We offer bolet mushrooms in 1-lb bags for food service or in bulk. We also offer bolet mushroom powder.

Wild harvested Inonotus obliquus (also known as “clinker polypore,” “cinder conk,” and “birch canker polypore”) is a sterile conk parasitic on birch and other trees. It looks like burnt charcoal, is dark (due to plentiful melanin), dense/woody and has an earthy, and slightly bitter taste. It has a wide range of traditional and medicinal applications. Studies suggest that chaga mushrooms have several health-promoting, anti-cancer and anti-inflammatory properties.

Agaricus bisporus (also referred to as “common white mushroom”, “button mushroom,” “table mushroom,” or “champignon” (French for mushroom) de Paris. We offer champignon in 1-lb bags for food service or in bulk. We also offer champignon powder (irradiated or non-irradiated) and freeze-dried champignon on pre-order in 20- or 40-foot containers.

Wild harvested Cantharellus Cibarius (commonly known as yellow or golden chanterelle) are common in Eurasia, North and Central America and Africa. In central Europe (where much of our chanterelles are harvested) golden chanterelle are often found in clusters among beech forests. Dried chanterelles are a culinary delicacy in many of the world’s kitchens since many cultures claim to have used golden chanterelles for centuries. In Europe, chanterelles are commonly thumb size while North American chanterelles are much larger - often as big or bigger than a fist.

Auricularia auricula judae, is a popular ingredient in many Chinese dishes and is also used in traditional Chinese medicine. Cloud ear is usually sold in dried form, needing to be soaked in water before use. Like the common (black and white) wood ear mushroom, cloud ear is smaller, is tan colored, and has a more subtle taste. Cloud ear (as well as wood ear) is prized for its slightly crunchy texture and nutritional benefits. This crunchiness persists even after cooking. Unlike other mushrooms, cloud ear and wood ear mushrooms return to their fresh form after rehydration. We offer cloud ear mushrooms in 1-lb bags, bulk cases and in pallets. King oyster mushrooms (Pleurotus Eryngii) is also known as king trumpet, French Horn mushroom, Eryngii, king brown mushrooms, boletus of the steppes, trumpet royale and Ali’I oyster. This mushroom is native to Mediterranean regions of Europe, the Middle East and North Africa, and is also cultivated in many parts of Asia. Cooked king oyster develops a rich umami flavor and meaty texture. As such, king oyster is commonly used as a meat substitute in many vegan recipes.

Studies have shown that king oysters contain chemicals that stimulate the immune system. Consumption of king oyster may function as a cholesterol-lowering dietary agent.

Lion’s Mane, Hericium Erinaceus (also called bearded hedgehog and “yamabushitake” in Japan). We offer whole, sliced, and powdered organic Lion’s Mane mushrooms in bulk and one-pound bags.

Lobster Mushroom (Hypomyces lactifuorum) is really not a mushroom but a parasitic ascomycete. Hypomyces lactifluorum grows on certain species of mushrooms, turning them a reddish orange color that resembles the outer shell of cooked lobster.

One of the best ways to rehydrate dried lobster mushrooms is soaking them in vegetable stock for about 15 to 30 minutes.

Morel Mushrooms (morchella spp) have been prized by gourmet cooks throughout the ages. Morels have a robust, meaty flavor when cooked. They are often described as “earthy, woodsy, and nutty.” Some have even described them as “slightly sweet” and “little smokey.” They are rich in nutrients, vitamins, and antioxidants, making them an excellent addition to any meal.

Due to the difficulties in cultivating morels, commercial harvesting is a huge business in North America, Turkey, China, the Himalayas and Pakistan where morels are found in abundance.

Pleurotus Ostreatus (Grey Oyster) and Pleurotus Eryngii (King Oyster) are currently available. Studies have shown that consumption of Pleurotus ostreatus, which is rich in functional ingredients such as β-glucans, may improve glucose and lipid metabolism, blood pressure, body weight and appetite sensations. Formitopsis Pinicola (also known as “Red Banded Polypore” or “Red Belted Conk”) is a large, dense and woody mushroom found predominantly in temperate, coniferous forests throughout Europe and Asia. Fomitopsis pinicola has been extensively used for medicinal purposes, particularly in Chinese and Korean traditional medicine. North American Indians have also used a conk type mushroom as a medicinal mushroom; however, it has been suggested that it may be a different species within the formitopsis family. Although studies are few, they suggest that red belted polypore may have anti-cancer and anti-inflammatory properties.
