Auricularia auricula judae, is a popular ingredient in many Chinese dishes and is also used in traditional Chinese medicine. Cloud ear is usually sold in dried form, needing to be soaked in water before use. Like the common (black and white) wood ear mushroom, cloud ear is smaller, is tan colored, and has a more subtle taste. Cloud ear (as well as wood ear) is prized for its slightly crunchy texture and nutritional benefits. This crunchiness persists even after cooking.
